The top priority for food businesses is to make sure the kai (food) is safe, suitable and the right processes are followed.
All food business operators or managers need to ensure all staff are trained in food safety.
All staff should know:
- what to do
- why they do it
- how their decisions and actions impact on food safety and suitability.
You will need to complete and sign a staff training record for each person who works in the business - including managers. This will be checked at your verification.
